A Fairly Representative Monday Night

On Monday nights we have something called Family Home Evening. This particular Monday night we talked about how great our bodies are and all the amazing things that they can do if you take good care of them. Then we made a monster batch of granola. We don't eat cereal, so this will be put to good use immediately. In fact, this recipe bakes for two hours, so the girls didn't get to try any this evening, but they know they get some tomorrow morning for breakfast. The recipe is quite tasty.

Granola
10 c old fashioned rolled oats
2c whole wheat flour
2c wheat germ
2c coconut
1.5- 2c chopped pecans and sliced almonds

mix above ingredients in large bowl
4T vanilla
1/2c water
2c honey
1c (or less) oil

mix wet ingredients in separate bowl, add to try ingredients
and combine well. spread in shallow pans. stir gently every
15 minutes or so while baking. bake at 250 until deep golden
and almost dry, approximately 2 hours. remove, let cool.
store tightly covered. in the refrigerator if you have room.

Did it turn out SUPER crunchy? Ours was almost like rocks.

We stopped baking at like 1.5 hrs and ours was pretty thick, like deep in the pan. I liked it for breakfast this morning.
